Leftover Night
Who doesn't like leftover night??? Well I do because it's a free night of NO cooking. I always make a little extra when I cook my dinner meals so I have enough just in case someone stops over or if my kids have friends over. :) Tonight I pulled out Chicken and rice soup and Spinage pesto tortellini (ok it was Thursday night but I am just getting to this blog). Thank you for all of those friends and family who have encourage me to start this. I look forward to sharing what I know and learning from each of you.......
So since I didn't have to prep for dinner tonight I have about 1/2 hour to prep some freezer food. I make protein pancakes and freeze them. I don't have a lot of time in the morning so it makes it really easy to just pull out a few pancakes and pop them in the toaster or microwave. (I try not to use the microwave very much) I know I posted this pancake mix before but I love it. Costco is the best place to get it.
I use a ice cream scoop to measure them out and they are the perfect size.
When they are done I put them on a cookie sheet and freeze them separately first. When they are frozen I put them in a zip lock bag all together.
Super EASY!!!!! They are so much better for you then the ones you buy in the store and it really doesn't take no time at all. While I am making the pancakes I am also making some blueberry syrup. I do use pure maple syrup also but can get pricey so I came up with this years ago.
Blueberry Syrup
4 C frozen blueberries
4 C water
1/2 C honey or other natural sweetener
1 t vanilla
2 t Glucomannan powder or other natural thickener
Just bring to a boil and let thicken so syrup sticks to back of spoon. It is a syrup so it will still be runny. Also you can use any frozen berries. My kids love it!!!
Store in the refrigerator...Enjoy!
